The department of Catering Science and Hotel Management at AJK College of Arts and Science organised its tenth food festival on 07.05.2023, The Great Indian Kitchen Carnival 2023. The major highlight of the food festival was exotic foods from 28 states of India, and the department of Costume Design and Fashion of AJKCAS had a Fashion Show with the costumes of 28 states of India. The students of the department of Catering Science and Hotel Management prepared 140 dishes from the different states of India like Uttarialoo chana chat, uppu cheedai, pickle veg, micro greens, breads, pav bhaji, kothu paratha, medu vada, paneer makhni, duma loo, hyderabadi biriyani, Malabar paratha, chicken chettinadu, meen kuzhambu, black forest cake, jalebi, rabdi and many more. The students of Catering Science and Hotel Management of AJKCAS exclusively did a lot of research and study on various foods of India. The department of Catering Science and Hotel Management, which offers PhD in Catering Science and Hotel Management, was also involved in the research, and the food prepared in the food festival will be documented in the research department. The uniqueness of this event, The Great Indian Kitchen Carnival 2023 at AJKCAS, was that it was open to the public to come and taste the food prepared by the students, and the entry for the event was through donor pass, which was available at various places. Around 2500 public attended this event, where there was Music, Dance and Fashion Show.
